If this isn't proof that the easiest things in life are the best then I don't know what is! Who knew you could make brownies without even a scrap of flour? So simple and totally delicious.
100 gms of chopped 70% cacao dark organic chocolate
3 mashed bananas
2 cups of nut or seed butter of your choice (I used homemade roasted almond and cashew nut butter)
1/2 cup of coconut sugar
3 tablespoons of cacao
1 1/2 tsp baking powder mixed with 1 tsp of apple cider vinegar (this will activate the powder and make it go foamy)
3 organic eggs beaten
2 tablespoons of melted coconut oil
Preheat oven to 160 degrees. In a large bowl mix fold the bananas, coconut oil, eggs and the nut butter together. Add the rest of the ingredients – reserving a few tablespoons of chopped chocolate for sprinkling on the top. You could also use nuts to decorate as well if you wish. Be careful not to overmix as this will keep the batter nice and fluffy. Then spoon into a prepared and baking paper lined 24 inch baking tray. Sprinkle top with remaining chocolate and bake for 25-30 mins in a 160 degree oven. It is done when you can touch the top and it springs back. Cool in tin and then cut into slices. Enjoy!
